Recipe: Vegan Alfredo

I’m not vegan (yet) but I do like to try and eat vegan sometimes so I decided to try an make some pasta with this vegan Alfredo sauce recipe I found on The Vegan 8. I filmed a YouTube video on it too. Editing was nerve wracking but I think I did pretty decent. Check it out.

Alfredo Sauce Ingredients:

  • 1 1/2 cups medium white onion
  • 1-2 cups vegetable broth
  • 1/2 tsp fine sea salt
  • 1/4 tsp ground black pepper
  • 3-4 minced garlic cloves
  • 1/2 heaping cup of raw cashews (soaked 2-4 hours in hot water)
  • 1 tbsp lemon juice
  • 1/4 cup nutritional yeast

Steps:

  1. Add chopped onion, 1 cup veggie broth, salt and pepper to a large pan over medium heat
  2. Cook for about 10 minutes
  3. Add garlic and cook for a few more minutes
  4. Add onion broth mixture into a blender with 3/4 cup of broth, nutritional yeast, lemon juice and rinsed cashews
  5. Add more broth to reach desired consistency if necessary
  6. Add more salt to taste
