I’m not vegan (yet) but I do like to try and eat vegan sometimes so I decided to try an make some pasta with this vegan Alfredo sauce recipe I found on The Vegan 8. I filmed a YouTube video on it too. Editing was nerve wracking but I think I did pretty decent. Check it out.
Alfredo Sauce Ingredients:
- 1 1/2 cups medium white onion
- 1-2 cups vegetable broth
- 1/2 tsp fine sea salt
- 1/4 tsp ground black pepper
- 3-4 minced garlic cloves
- 1/2 heaping cup of raw cashews (soaked 2-4 hours in hot water)
- 1 tbsp lemon juice
- 1/4 cup nutritional yeast
Steps:
- Add chopped onion, 1 cup veggie broth, salt and pepper to a large pan over medium heat
- Cook for about 10 minutes
- Add garlic and cook for a few more minutes
- Add onion broth mixture into a blender with 3/4 cup of broth, nutritional yeast, lemon juice and rinsed cashews
- Add more broth to reach desired consistency if necessary
- Add more salt to taste
